Ginger Molasses Cookies Recipe

Normally I am a chocolate chip cookie kind of girl but these chewy ginger molasses cookies just have the best flavor and texture that make them totally irresistible.

These Chewy Ginger Molasses Cookies are my favorite cookie, not just favorite holiday cookie but all time favorite cookie. It’s weird to think that these flavors are normally something that you save for the holiday season when you could be enjoying them year round.

I know that most people think ginger and molasses are holiday flavors and that is when you should make molasses cookies, however I think they are for all year round! Once you make these molasses ginger cookies I promise you, you are going to change your mind about only making them for the holidays.

You need to try these ginger cookies out for yourself and tell me what you think of them. I promise these will not disappoint! Also, do not forget your big glass of milk because these cookies are great for dunking!

Tips for making these cookies

Room temperature butter. Room temperature butter is important when making these cookies. But do not put the butter in the microwave, let the butter sit on the counter to bring to room temperature.

Line the baking sheets. When you are baking cookies it is much better to bake them on a lined baking sheet then right on the metal baking sheet. Line the baking sheet with either parchment paper or a silicon mat.

Can you freeze molasses cookies?

Yes! It is easy to freeze these homemade molasses cookies. Before freezing easy molasses cookies, allow the cookies to cool completely on a cooling rack.

Then place the soft ginger cookies in a single layer on a parchment-lined baking sheet and put them in the freezer for 1-2 hours to freeze them. Once the molasses cookies are frozen, store them in a zip top freezer bag in the freezer.

Cookies will keep in the freezer for up to 3 months. To defrost the cookies, remove them from the freezer the night before you want to serve them and let them thaw in the fridge.

How to freeze Molasses Cookie Dough

You can also make the molasses cookie dough ahead of time and freeze it. You can freeze is in a cookie roll or as individual cookie dough balls. I find it easier to use later when I freeze it as molasses cookie dough balls instead of the roll.

To freeze unbaked molasses cookie dough, make your dough and then roll it into individual balls. Then place the ginger molasses cookie dough in a single layer on a parchment-lined baking sheet and put them in the freezer for 1-2 hours to freeze them. Once the molasses cookies are frozen, store them in a zip top freezer bag in the freezer.

Cookies will keep in the freezer for up to 3 months. When you are baking molasses cookie dough from the freezer, place the balls of cookie dough on a lined baking sheet and bake as normal adding 2-3 minutes of extra bake time.

Chewy Ginger Molasses Cookies Ingredients

  • 4 cups all-purpose flour
  • 1 1/2 cups butter, softened
  • 2 cups granulated sugar
  • 1/2 cup molasses
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 2 eggs
  • 1 teaspoon salt

How to Make Ginger Molasses Cookies

Preheat oven to 375F degrees. Line two baking sheets with parchment paper.

In a large mixing bowl whisk together the dry ingredients- flour, baking soda, cinnamon, cloves, ginger, and salt, set the bowl aside.

Cream the butter and sugar together on medium speed until light and fluffy about 5 minutes using a stand mixer or hand mixer.

Once the butter and sugar are creamed together add in the molasses and mix until it is well combined.

Add in one egg at a time, making sure each egg is incorporatedbefore adding the next egg.

Turn the mixer down to low and slowly add in the flour just until all the flour is combined. DO NOT OVER MIX!

Take a tablespoon worth of dough and roll in into a ball, repeat with all the dough.

Place the dough in the fridge for 10 minutes.

Place the balls on the baking sheet about an inch apart.

Bake for 8-10 minutes, until the tops start to crack.

Move them to a cooling rack to cool completely.
